Claytonia perfoliata (Winter Purslane, Miner's lettuce)
Claytonia perfoliata is aloso known as Miner's lettuce, Winter Purslane, Indian lettuce and Montia perfoliata. It is a fleshy annual plant native to the North American coastline and most common in California in the Sacramento and northern San Joaquin valleys. Miner's lettuce is named after the California gold rush miners who collected and ate it to get their vitamins. It can be eaten raw in salads, and tastes similar to Corn salad. Claytonia perfoliata is widely naturalized in western Europe.
