Portulaca oleracea, Common Purslane

Portulaca oleracea (Common Purslane), is an annual succulent, which can reach 40 cm in height. The yellow flowers first appear in late spring and continue into fall. Seeds are formed in a tiny pod. Purslane tolerates poor soils and drought. Purslane can be eaten as a leaf vegetable or salad similar to Claytonia perfoliata. It has a slightly sour, salty taste and can be used fresh as a salad. It contains Omega-3 fatty acid normally found mostly in fish, and vitamin C.
